Hot Blueberry Sauce

Serve hot on sponge cake, cold on ice cream.
Instead of blueberries, for a delicious apple sauce, use 2 peeled thinly sliced apples.

  • 2 cups [500 mL] fresh blueberries
  • 1/2 cup [100 g] sugar
  • Grated rind of 1/2 a lemon
  • 1 tablespoon [15 mL] freshly squeezed lemon juice
  • 1/2 cup [125 mL] water
  • 1 teaspoon [5 mL] cornstarch
  • 2 tablespoons [30 mL] apple or orange juice
  • Into a bowl, well mix together blueberries, sugar, grated lemon rind, lemon juice and water.
  • Microwave on 'HIGH' for 4 minutes.
  • Stir.
  • Dilute cornstarch diluted into apple or orange juice.
  • Stir into hot mixture.
  • Microwave on 'MEDIUM-HIGH' for approximately 3 minutes stirring after 2 minutes, until creamy and shiny.
