- 4 Granny Smith apples
- 1 teaspoon [5 g] sugar
- Juice of 1 lemon
- 3 tablespoons [45 mL] water
- 1 fresh pineapple

- 1 mango
- 2 bunches currants
- Chocolate shavings
- 3/4 ounce [20 g] candied orange rinds

- Peel, half then core apples.
- Arrange apple halves into a microwave-safe dish, with a lid.
- Sprinkle apples with sugar, with a little of the lemon juice and all of the water.
- Cover and microwave apples on 'MAXIMUM' for 8 minutes; leave to cool.
- Peel, core then cut pineapple meat into large cubes.
- Press pineapple cubes through a strainer; refrigerate sauce.
- Peel and slice mango.
- Cut 2 of baked apple halves into strips.
- Line a laddle with 1/4th of apple strips; fill the inside with 1/4th of remaining apple halves, already cut into tiny dices.
- Unmold onto an individual serving plate.
- Repeat proceedings 3 times.
- Pour cold pineapple sauce all around mounds.
- To serve, decorate each apple mound with mango slices, currants and chocolate shavings, then with candied orange rinds.
