Apples from the Islands

Comments: Baked apples, even though soft, will have kept their shapes.

  • 4 Granny Smith apples
  • 1 teaspoon [5 g] sugar
  • Juice of 1 lemon
  • 3 tablespoons [45 mL] water
  • 1 fresh pineapple
Decorations
  • 1 mango
  • 2 bunches currants
  • Chocolate shavings
  • 3/4 ounce [20 g] candied orange rinds
  • Peel, half then core apples.
  • Arrange apple halves into a microwave-safe dish, with a lid.
  • Sprinkle apples with sugar, with a little of the lemon juice and all of the water.
  • Cover and microwave apples on 'MAXIMUM' for 8 minutes; leave to cool.
  • Peel, core then cut pineapple meat into large cubes.
  • Press pineapple cubes through a strainer; refrigerate sauce.
  • Peel and slice mango.
  • Cut 2 of baked apple halves into strips.
  • Line a laddle with 1/4th of apple strips; fill the inside with 1/4th of remaining apple halves, already cut into tiny dices.
  • Unmold onto an individual serving plate.
  • Repeat proceedings 3 times.
  • Pour cold pineapple sauce all around mounds.
  • To serve, decorate each apple mound with mango slices, currants and chocolate shavings, then with candied orange rinds.
