Cucumber Yogurt Dip

IngredientsPreparation
  • 1/2 unpeeled cucumber, seeded and grated
  • 1/2 small onion, finely chopped
  • 1/2 small sweet green pepper, membranes removed and seeded, finely chopped
  • 1 tablespoon [15 g] butter
  • 3/8 cup [90 mL] mayonnaise
  • 5/8 cup [150 mL] plain yogurt
  • 1 teaspoon [5 mL] Worcestershire sauce
    or
    1/2 teaspoon [2.5 mL] freshly chopped mint
  • Salt and pepper, to taste
  • Drain grated cucumber onto paper toweling; reserve.
  • Microwave together chopped onion and sweet green pepper with butter, covered on 'MAXIMUM', for 2 1/2 to 3 minutes.
  • Mix in reserved drained grated cucumber, then mayonnaise, yogurt and Worcestershire sauce or freshly chopped mint.
  • Salt and pepper mixture.
  • If desired, refrigerate dip before serving, along with mixed raw vegetable pieces.
