Tomato Pickled Sweet Green Pepper Dip

  • 1 large onion, finely chopped
  • 1 [14-ounce / 398-mL] can tomatoes, drained then chopped
  • 4 ounces [125 mL] pickled sweet green pepper, well-drained then chopped
  • 3 tablespoons [45 mL] plain yogurt
  • 1/4 teaspoon [1 mL] curcuma
  • 8 ounces [227 g] tiny Cheddar cheese dices
  • Salt [optional]
  • Microwave together chopped onion and tomatoes on 'MAXIMUM' for 4 to 5 minutes; drain well.
  • Then mix in chopped pickled sweet green pepper, yogurt, curcuma and tiny Cheddar cheese dices; if desired, salt to taste.
  • Microwave dip for 2 1/2 to 3 minutes on 'MAXIMUM', stirring twice.
  • Check for seasonings.
  • Serve hot.
