Florentine-Style Dip

  • 6 ounces [170 g] frozen spinach
  • 6 slices bacon, cut into small pieces
  • 1/2 small onion, finely chopped
  • 1 clove garlic, crushed
  • 8 ounces [227 g] low-fat cream cheese
  • Salt and pepper, to taste
  • 2 ounces [56 g] pecans, chopped
  • Crackers
  • Microwave spinach on 'MAXIMUM' for 4 to 5 minutes.
  • Well press between two plates to extract as much as possible of the liquid; grossly chop.
  • Microwave together bacon pieces, chopped onion and crushed garlic on 'MAXIMUM' for 3 to 4 minutes, stirring once.
  • Mix in spinach, cream cheese, salt, pepper and pecans.
  • Refrigerate for 15 minutes before serving, along with crackers.
