- 1/2 cup [125 mL] cider vinegar
- 2 cups [500 mL] water
- 3 tablespoons [45 mL] pickling salt
- 2 tablespoons [30 mL] honey
- 2 tablespoons [30 mL] peppercorns
- 2 cinnamon sticks
- Handful of fresh dill [if available] or 2 tablespoons [30 mL] dried dill
- 2 to 4 pounds [1 to 2 kg] fresh salmon

- In a ceramic or plastic dish large enough to hold the piece of salmon, mix together cider vinegar, water, pickling salt, honey, peppercorns and cinnamon sticks.
- Microwave mixture to a boil, on 'MAXIMUM' for 10 minutes.
- Simmer mixture, covered, on 'MEDIUM' for 10 minutes.
- Arrange salmon in hot broth.
- Cover dish; microwave salmon on 'MEDIUM', 6 minutes per pound [454 g], turning salmon after the first 6 minutes.
- Remove from microwave-oven.
- Sprinkle salmon with cooking juices.
- Remove cinnamon sticks.
- Cover dish; leave to cool for 30 minutes, then refrigerate.
- Leave salmon to marinate in cooking juices for 2 days, before serving.
