Greek-Style Haddock Fillets

  • 1 [19-ounce / 540-mL] can tomatoes, with juice
  • 1/2 cup [125 mL] soda cracker crumbs
  • 1 teaspoon [5 g] sugar
  • 1/4 teaspoon [1 mL] basil
  • 1/2 teaspoon [2.5 mL] salt
  • 1 pound [454 g] frozen haddock fillets
  • 3 green onions, finely minced
  • 1/4 cup [60 mL] freshly chopped parsley
  • 1/4 cup [60 mL] vegetable oil
  • 2 tablespoons [17.5 g] flour
  • 1 tablespoon [15 mL] paprika
  • Pour tomatoes into an 8-inch [20-cm] square glass dish; sprinkle tomatoes with soda cracker crumbs.
  • Sprinkle with sugar, basil and salt.
  • Mix together, using a fork.
  • Arrange frozen haddock [block] over tomatoes.
  • In a bowl, mix together green onions, parsley, vegetable oil, flour and paprika; pour over fish.
  • Cover with waxed paper.
  • Microwave on 'MAXIMUM' for 8 to 10 minutes, until fish is cooked in the center.
  • Leave to rest for 5 minutes.
  • Serve.
