Tuna Macaroni Casserole

  • 2 cups [500 mL] macaroni elbows
  • 1 teaspoon [5 mL] salt
  • 4 cups [1 L] boiling water
  • 1 [6 1/2-ounce / 184-mL] can flaked tuna fish, drained
  • 1 small onion, finely chopped
  • 2 tablespoons [30 mL] chopped parsley
  • 1/2 teaspoon [2.5 mL] curry powder
  • 1 [10-ounce / 284-mL] can cream of chicken soup concentrate
  • 1/2 cup [125 mL] breadcrumbs
  • Diced butter
  • Pour macaroni into an 8-cup [2-L] casserole.
  • Salt and pour in boiling water.
  • Microwave uncovered, for 6 to 8 minutes, on 'MEDIUM-MAXIMUM'.
  • Leave to rest for 5 minutes.
  • Drain pasta.
  • Into casserole, well mix together tuna fish flakes, chopped onion and parsley, curry powder and cream of chicken soup.
  • Well mix in cooked drained macaroni.
  • Sprinkle mixture with breadcrumbs; dot with butter dices.
  • Microwave, uncovered for 6 to 8 minutes, on 'MEDIUM-MAXIMUM'.
  • Leave to rest for 5 minutes, before serving.
