Water-Poached Fish

Here is the method to be used to microwave whole small fish or sliced large fish.

  • Sliced fish
  • Lemon juice
  • Pepper
  • 2 cups [500 mL] lukewarm or cold water
  • Sprinkle each slice of fish with a few drops lemon juice and a pinch of pepper.
  • Arrange fish slices in the same manner they were before being sliced; wrap into any clean, white cloth.
  • Pour water into a 4-cup [1-L] plastic or glass dish; cover.
  • Microwave for 10 minutes, on 'MAXIMUM'.
  • Uncover, transfer wrapped fish into hot water.
  • Microwave for 3 minutes per pound [454 g] on 'MAXIMUM'.
  • Do not microwave more than 3 pounds [1.4 kg] fish at a time.
  • Leave fish to rest in cooking water for 5 minutes.
  • Remove fish from cooking water; refrigerate or serve, along with your favorite sauce.
