Scandinavian-Style Poached Cod

Small cod fillets or steaks are easier to poach.
This recipe can also be used to poach small salmon fillets.
Serve along with melted butter mixed with a little lemon juice and minced parsley, or with a parslied white sauce.

  • 1 cup [250 mL] hot water
  • Juice of 1 lemon
  • 1 small onion, thinly sliced
  • 1 celery stalk, diced
  • 2 garlic cloves, crushed
  • 1 bay leaf
  • 1/4 teaspoon [1 mL] thyme
  • 4 cloves
  • 1 teaspoon [5 mL] salt
  • 1/4 teaspoon [1 mL] peppercorns
  • 4 to 6 [6-ounce / 170-g each] cod steaks or fillets
  • Mix together all ingredients, except cod, into a glass dish.
  • Cover; microwave on 'MAXIMUM' for 6 minutes, to bring mixture to a boil.
  • Mix well; arrange cod steaks or fillets side-by-side into dish.
  • Cover dish; poach fish on 'MAXIMUM' for 2 minutes.
  • Delicately turn fish; cover and poach on 'MAXIMUM' for 1 minute longer.
  • Leave to rest for 5 to 8 minutes, before serving.
