Salmon Couscous

  • 1 1/2 cups [375 mL] chicken broth
  • 1 tablespoon [15 mL] olive oil
  • 1 tablespoon [15 mL] lemon juice
  • 1 cup [250 mL] semolina
  • 1 [7 1/4-ounce / 220-mL] can salmon, drained
  • 1 sweet red pepper, membranes removed and seeded, chopped then browned into hot oil
  • 2 Italian tomatoes, seeded and diced
  • 1/4 cup [60 mL] freshly chopped parsley
  • Salt and pepper, to taste
  • Into a microwave-safe dish, mix together chicken broth, olive oil and lemon juice.
  • Cover and microwave on 'MAXIMUM' for 4 minutes.
  • Mix in semolina; cover and leave to rest for 5 minutes.
  • Mix in drained salmon, browned chopped sweet red pepper, tomato dices, chopped parsley, salt and pepper, and serve.
