- 1 1/2 cups [375 mL] chicken broth
- 1 tablespoon [15 mL] olive oil
- 1 tablespoon [15 mL] lemon juice
- 1 cup [250 mL] semolina
- 1 [7 1/4-ounce / 220-mL] can salmon, drained
- 1 sweet red pepper, membranes removed and seeded, chopped then browned into hot oil
- 2 Italian tomatoes, seeded and diced
- 1/4 cup [60 mL] freshly chopped parsley
- Salt and pepper, to taste

- Into a microwave-safe dish, mix together chicken broth, olive oil and lemon juice.
- Cover and microwave on 'MAXIMUM' for 4 minutes.
- Mix in semolina; cover and leave to rest for 5 minutes.
- Mix in drained salmon, browned chopped sweet red pepper, tomato dices, chopped parsley, salt and pepper, and serve.
