- 3 tablespoons [45 g] margarine
- 2 1/2 tablespoons [22 g] flour
- 1/2 cup [125 mL] chopped onion
- 2 small sweet green peppers, membranes removed and seeded, chopped
- 1/2 cup [125 mL] chopped celery
- 1/2 teaspoon [2.5 mL] thyme
- 2 teaspoons [10 mL] paprika
- 1/2 teaspoon [2.5 mL] black pepper
- 1 teaspoon [5 mL] parsley
- 1 bay leaf
- 1/2 teaspoon [2.5 mL] seafood seasoning
- 1/2 cup [125 mL] white wine
- 1/4 cup [60 mL] water
- 3 small tomatoes, chopped
- 1/2 pound [227 g] cod, haddock or pollock fillets, into pieces
- 1/2 pound [227 g] pollock fillets, into pieces

- Into a 4-quart [4-L] casserole dish, melt margarine into microwave oven on 'MEDIUM-HIGH' [80%] for approximately 45 seconds, until melted.
- Mix in flour, cover and cook on 'MEDIUM-HIGH' [80%] for 1 minute.
- Stir and cook for 30 seconds; stir and cook for 15 seconds.
- Add chopped onion, sweet green peppers and celery; sprinkle all over with thyme, paprika, black pepper, parsley, bay leaf and seafood seasoning.
- Pour in white wine and water.
- Well mix together all ingredients, cover, microwave on 'HIGH' [100%] for 2 minutes.
- Stir in chopped tomatoes.
- Microwave on 'HIGH' [100%] for 2 minutes more.
- Cover and microwave on 'MEDIUM' [70%] for 10 minutes, stirring every 3 minutes.
- Arrange pieces of cod, haddock or pollock fillets on top of mixture.
- Completely cover with pollock pieces, cut to fit the casserole.
- Cover casserole and microwave mixture on 'HIGH' [100%] for 4 minutes.
- Stir, and serve.
