Ground Beef Rice Casserole

  • 1 pound [454 g] ground beef
  • 1 [19-ounce / 540-mL] can tomato cubes
  • 1 pack dry onion soup mix
  • 1 cup [250 mL] long grain white rice
  • 1/2 teaspoon [2.5 mL] garlic powder
  • 1 [10-ounce / 284-mL] can mushrooms, drained
  • Into a frypan, brown ground beef stirring until crumbled, well done; drain then reserve ground beef.
  • Reserving juice into a 4-cup measuring cup, drain tomatoes.
  • Pour enough water to reserved tomato juice to get 2 cups [500 mL] liquid; microwave liquid for a few minutes, to warm it up.
  • Into an microwave-safe dish, mix together tomatoes and warm tomato juice, onion soup mix, white rice, garlic powder, drained mushrooms and reserved browned ground beef.
  • Cover and microwave on 'MEDIUM-LOW' for 30 minutes, until all of liquid has been absorbed.
