Macaroni with Cheese and Sour Cream

Comments: Unflavored yogurt can be used instead of sour cream.

  • About 2 cups [500 ml] of macaroni
  • 1 1/2 to 2 cups [375 to 00 ml] medium Cheddar cheese, shredded
  • 1 cup [250 ml] cottage cheese
  • 1/2 cup [125 ml] sour cream
  • 3 slices of pepper ham, cubed
  • Salt and pepper
  • 4 green onions, chopped
  • Parsley, chopped
  • Butter
  • Cook macaroni.
  • Drain and set aside.
  • Mix together cheddar and cottage cheese in small bowl.
  • Grease a square mold [8 inches / 20 cm]; place in it half the macaroni, spread half the cheese mixture and add half the ham.
  • Repeat with remaining macaroni, cheese and ham.
  • In a bowl, mix together sour cream, salt, pepper, green onions and parsley.
  • Spread over macaroni and scatter knobs of butter on top.
  • Cook in microwave 8 to 10 minutes, uncovered, on high [time and power for a 750 watt oven].
