Turkey Risotto

Serve hot, along with a fresh tomato and an onion salad, cold onto a buffet table or bring over on a picnic.
Contrary to what is believed, wild rice is not a rice but the seed of a very difficult to grow water plant, which explains its high price; it is conveniently mixed with long grain and sold at a cheaper price.
Wild rice has a nutty flavor and is crunchy, with a high fiber content.

  • 1 celery stalk, chopped
  • 1 onion, chopped
  • 2 tablespoons [30 mL] polyinsaturated margarine
  • 1 3/4 cups [440 mL] water
  • Salt, to taste
  • 8 ounces [227 g] cooked turkey, cut into 1/2-inch [1.3-cm] cubes
  • 4 ounces [113 g] fresh mushrooms, cut into large pieces
  • 6 ounces [170 g] long grain rice and wild rice mix
  • Into an 8-ounce [2-L] cup, mix together chopped celery, onion and margarine.
  • Cover and microwave on 'MAXIMUM' for 3 to 4 minutes, until vegetables are soft and translucent.
  • Mix in water, salt, cover and microwave for 3 to 4 minutes on 'MAXIMUM', until boiling.
  • Mix in turkey cubes, mushroom pieces and rice mix.
  • Microwave on 'MEDIUM', covered, for 20 to 25 minutes, until rice is tender and water has been absorbed.
