Turkey Parts with Hot Red Peppers

  • 2 large onions, minced
  • 4 [10-ounce / 283-g each] turkey parts
  • 2 garlic cloves, crushed
  • 2 tablespoons [30 mL] soy sauce
  • 1 teaspoon [5 mL] ginger
  • 2 hot red peppers, seeded and minced
  • 2 teaspoons [10 mL] caraway seeds, crushed
  • 4 teaspoons [20 mL]] coriander seeds, crushed
  • Grated rind of 1 lemon
  • 3/4 cup [190 mL] thick plain yogurt
  • 2 teaspoons [10 mL] cornstarch
  • 4 tablespoons [60 mL] chicken broth
  • Salt and pepper, to taste
  • Arrange minced onions into a deep 8-cup [2 L] dish.
  • Cover and microwave for 7 to 8 minutes on 'MAXIMUM', until tender, stirring once.
  • Arrange turkey parts into dish, meaty sides up.
  • Add garlic, soy sauce, ginger, hot red peppers, caraway seeds, coriander seeds and lemon rind.
  • Microwave, covered, for 6 to 7 minutes on 'MAXIMUM', stirring once.
  • Mix together plain yogurt and cornstarch; pour in chicken broth and stir.
  • Microwave, covered, for 3 to 4 minutes on 'MAXIMUM', until boiling.
  • Microwave for 10 to 15 minutes longer, on 'MEDIUM'.
  • Uncover, arrange turkey parts into dish and microwave for 10 minutes on 'MEDIUM', until sauce thickens and juices run clear from turkey, when pierced with a knife.
  • Leave to rest for 5 minutes, covered.
  • Check for seasonings, even though the soy sauce gives a salty taste to this dish.
  • Serve immediately.
