Turkey with Avocado

  • 2 avocados
  • 2 teaspoons [10 mL] lemon or lime juice
  • 6 ounces [170 g] turkey meat, cubed
  • 2 tomatoes, peeled and chopped
  • 1 or 2 hot green peppers, seeded and chopped
  • 1 onion, finely minced
  • Salt, to taste
  • 1/4 teaspoon [1 mL] caraway seeds
  • Pinch of Cayenne pepper
  • 4 ounces [113 g] Cheddar cheese, grated
  • Half avocados lengthwise; remove stones.
  • Delicately spoon out avocado meat; cut avocado meat into 1/2-inch [1.3-cm] cubes, reserving peels.
  • Sprinkle avocado cubes with lemon or lime juice so that they do not darken; reserve.
  • Arrange avocado peels into a deep dish; reserve.
  • Into a 7 1/2-cup [1.875-L] bowl, mix together turkey cubes, chopped tomatoes and hot green peppers, minced onion, salt, caraway seeds and Cayenne pepper.
  • Cover and microwave for 4 to 6 minutes on 'MAXIMUM', until onion is soft, stirring once while cooking and at the end of cooking time.
  • Delicately mix reserved avocado cubes and 3/4th of the grated Cheddar cheese into hot mixture.
  • Evenly divide mixture among reserved avocado peels.
  • Sprinkle with remaining grated Cheddar cheese.
  • Microwave for 2 1/2 to 4 minutes on 'MEDIUM', until cheese has melted.
  • Serve hot.
