Chicks with Tomatoes

An excellent dish that can be served at dinner, along with oven-baked potatoes or any pasta.
So that the chicks are nicely colored, do not forget to brush chicks with a brown or barbecue sauce, once before cooking and once at half-time.
Just before serving, chicks can be lightly sprinkled with paprika or microwave seasonings.

  • 3 zucchinis [8 ounces / 225 g], sliced
  • 6 small green onions, sliced
  • 2 garlic cloves, crushed
  • 14 ounces [398 mL] canned tomatoes
  • 2 tablespoons [30 mL] tomato paste
  • 2 [1 to 1 1/4-pounds / 454 to 567-g each] chicks
  • Salt and pepper, to taste
To serve [optional]
  • 8 ounces [227 mL] canned apricots, reserve juice
  • 1 tablespoon [15 mL] apricot juice
  • Into a 7 1/2-cup [1.875-L] microwave-safe casserole, mix together zucchini slices, green onion slices, crushed garlic, tomatoes and tomato paste.
  • Arrange chicks over vegetables, breast side down.
  • Cover casserole; microwave for 13 to 16 minutes on 'MAXIMUM', turning and moving chicks at half-time.
  • Remove chicks from casserole; cover chicks with al foil and leave to rest for 5 minutes.
  • Reheat vegetable sauce, 4 to 5 minutes on 'MAXIMUM', stirring at half-time.
  • Season with salt and pepper.
  • Serve chicks, coated with sauce.
To serve [optional]
  • If desired, heat drained apricots into apricot juice, covered, for 45 to 60 seconds on 'MAXIMUM'.
  • Arrange apricots all around chicks and serve.
