- 3 zucchinis [8 ounces / 225 g], sliced
- 6 small green onions, sliced
- 2 garlic cloves, crushed
- 14 ounces [398 mL] canned tomatoes
- 2 tablespoons [30 mL] tomato paste
- 2 [1 to 1 1/4-pounds / 454 to 567-g each] chicks
- Salt and pepper, to taste

- 8 ounces [227 mL] canned apricots, reserve juice
- 1 tablespoon [15 mL] apricot juice

- Into a 7 1/2-cup [1.875-L] microwave-safe casserole, mix together zucchini slices, green onion slices, crushed garlic, tomatoes and tomato paste.
- Arrange chicks over vegetables, breast side down.
- Cover casserole; microwave for 13 to 16 minutes on 'MAXIMUM', turning and moving chicks at half-time.
- Remove chicks from casserole; cover chicks with al foil and leave to rest for 5 minutes.
- Reheat vegetable sauce, 4 to 5 minutes on 'MAXIMUM', stirring at half-time.
- Season with salt and pepper.
- Serve chicks, coated with sauce.

- If desired, heat drained apricots into apricot juice, covered, for 45 to 60 seconds on 'MAXIMUM'.
- Arrange apricots all around chicks and serve.
