Chicks in White Wine

An elegant, refined meal!
To give the chicks an appetizing color, do not forget to brush the chicks with brown or barbecue sauce, once before cooking and once at half-time.
Just before serving, chicks can be lightly sprinkled with paprika or microwave seasonings.
For an elegant, out of the ordinary evening meal, first serve a hors d'oeuvre made of crab or smoked salmon, along with whole wheat crackers.
Serve these chicks surrounded with mini mashed potato mounds, carrot sticks and sliced zucchinis: arrange 8 ounces [227 g] carrot sticks all around a serving plate, sprinkle with water, cover and microwave for 2 minutes on 'MAXIMUM'. Arrange 8 ounces [227 g] zucchini slices in the center of the serving plate, cover and microwave for 3 to 5 minutes, until tender.
Leave to rest for 2 to 3 minutes before serving.
For dessert, serve a fresh fruit salad.

  • 2 [1 to 1 1/4-pound / 454 to 567-g each] chicks
  • 7/8 cup [220 mL] dry white wine
  • 2 tablespoons [30 mL] chopped parsley
  • 1 tablespoon [15 mL] thyme
  • 1 tablespoon [15 mL] tarragon
  • Pepper, to taste
  • 1 tablespoon [15 mL] all-purpose flour
  • 2 tablespoons [30 mL] butter
  • Paprika
  • Arrange chicks into a 7 1/2-cup [1.875-L] microwave-safe casserole, breast side down.
  • Pour in 5/8 cup [155 mL] dry white wine.
  • Sprinkle with parsley, thyme, tarragon and pepper.
  • Microwave for 13 to 16 minutes on 'MAXIMUM', turning and moving chicks at half-time.
  • Remove chicks from casserole; cover chicks with al foil and set aside for 5 minutes.
  • Meanwhile, mix together flour and remaining dry white wine; stir into cooking juices.
  • Stir in butter.
  • Microwave for 2 to 2 1/2 minutes on 'MAXIMUM', until thickened, stirring at half-time.
  • Serve chicks coated with white wine sauce, sprinkled with paprika.
