Chicks with Apricots

Serve these chicks over brown rice, along with broccoli and lightly heated apricots.
To give the chicks an appetizing color, do not forget to brush the chicks with brown or barbecue sauce, once before cooking and once at half-time.
Just before serving, chicks can be lightly sprinkled with paprika or microwave seasonings.

  • 6 tablespoons [90 mL] freshly made breadcrumbs
  • 4 ounces [113 g] dried apricots, soaked until swollen and then chopped
  • 2 ounces [57 g] raisins
  • 4 tablespoons [60 mL] liquid honey
  • 2 [1 to 1 1/4-pound / 454 to 567-g each] chicks
Apricots
  • 8 ounces [227 mL] canned apricots
  • 1 tablespoon [15 mL] apricot juice
  • Mix together breadcrumbs, swollen chopped apricots, raisins and 1 tablespoon [15 mL] liquid honey.
  • Stuff chicks with breadcrumb mixture.
  • Arrange chicks, breast side down, into a microwave-safe roasting pan.
  • Brush chicks with a little of remaining honey.
  • Microwave for 13 to 16 minutes on 'MAXIMUM', until cooking juices run clear when pierced wiht a fork, turning chicks and brushing chicks with remaining honey at half-time.
  • Cover chicks with al foil; set aside for 5 minutes before serving.
  • For 1 person: use half of all ingredients and microwave chick for 7 to 10 minutes; set aside, covered, for 5 minutes before serving.
  • To serve, arrange heated abricots all around chicks.
Apricots
  • Drain and heat together apricots and apricot juice, covered, for 45 to 60 seconds on 'MAXIMUM'.
