Chicks Glazed with Cranberries

These chicks are absolutely divine, served with hazelnut brown rice and buttered carrots or fresh mint flavored peas.
To give the chicks an appetizing color, do not forget to brush the chicks with brown or barbecue sauce, once before cooking and once at half-time.
Just before serving, chicks can be lightly sprinkled with paprika or microwave seasonings.
Servings: 1 or 2
IngredientsPreparation
  • 2 [1 to 1 1/4-pound / 454 to 567-g each] chicks
  • Salt and pepper, to taste
  • 1 large apple, cut into 1/2-inch [1.3-cm] pieces
  • 1 tablespoon [15 mL] dark brown sugar
Glaze
  • 4 tablespoons [60 mL] cranberry jelly
  • 2 teaspoons [10 mL] Brandy
  • 1/4 teaspoon [1 mL] cinnamon
  • Wash and rub dry chicks; salt and pepper generously.
  • Mix together apple pieces and dark brown sugar.
  • Stuff chicks with mixture.
  • Arrange chicks into a roasting pan, breasts side up.
  • Mix together all glaze ingredients cranberry jelly, Brandy and cinnamon.
  • Brush chicks with half of glaze mixture.
  • Microwave for 13 to 16 minutes on 'MAXIMUM' [turn and brush chicks with glaze at half-time].
  • Leave to rest, covered, for 5 minutes before serving.
For 1 person
  • Half all ingredients, using a small apple.
  • Microwave stuffed chick for 6 to 9 minutes on 'MAXIMUM', until cooking juices run clear; turn and brush chick with glaze at half-time.
  • Leave to rest, covered, for 5 minutes before serving.
