Almond Stuffed Chicks

To give the chicks an appetizing color, do not forget to brush them with brown or barbecue sauce, once before cooking and once at half-time.
Before serving, chicks can be lightly sprinkled with paprika or microwave seasonings.
Serve these chicks with mixed vegetables [small peas, onions and mushrooms] and a greeen salad.
Some also like redcurrant jelly with poultry.

  • 1 thick slice of bread, toasted
  • 2 tablespoons [30 mL] unblanched, minced almonds
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1 teaspoon [5 mL] ground mixed spices
  • 2 tablespoons [30 mL] soy sauce
  • 2 tablespoons [30 mL] corn syrup
  • 2 chicks [1 to 1 1/4 pounds / 454 to 567 g each]
  • Cut toasted slice of bread into 1/2-inch [1.3-cm] cubes.
  • Mix in almonds, onion, celery, mixed spices, 1 tablespoon [15 mL] soy sauce and 1 tablespoon [15 mL] corn syrup; mix well.
  • Stuff chicks with mixture.
  • Arrange chicks, breast side down, into a microwave-safe roasting pan.
  • Mix together remaining soy sauce and corn syrup; brush chicks with mixture.
  • Microwave for 13 to 16 minutes on 'MAXIMUM', turning and moving chicks at half-time.
  • Cover chicks with al foir; leave to rest for 5 minutes before serving.
For 1 person
  • Use only half of all the ingredients.
  • Microwave stuffed chick for 7 to 10 minutes, until cooking juices run clear.
  • Leave to rest for 5 minutes before serving.
