Lemon-Flavored Rice

  • 1 1/2 cups [375 mL] water
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 cup [125 mL] lemon juice
  • 1 cup [250 mL] short-grain rice
  • 3 tablespoons [45 g] butter
  • Rind of 1 lemon, into thin strips
  • 2 to 3 tablespoons [30 mL to 45 mL] minced parsley
  • Salt and pepper
  • Pour water into an 8-cup [2-L] casserole; mix in salt and lemon juice.
  • Bring to a boil, on 'HIGH', for 5 minutes.
  • Well mix in rice; cover and microwave for 10 minutes on 'MEDIUM-HIGH'.
  • Thoroughly mix; set aside, covered, for 15 minutes.
  • Into a dish, mix together butter, lemon rind strips and parsley.
  • Microwave for 2 minutes, on 'HIGH'.
  • Mix into rice mixture, stirring with a fork.
  • If needed, reheat for 1 minute, on 'HIGH'.
  • Salt and pepper, to taste.
