- 1 1/2 cups [375 mL] water
- 1/2 teaspoon [2.5 mL] salt
- 1/2 cup [125 mL] lemon juice
- 1 cup [250 mL] short-grain rice
- 3 tablespoons [45 g] butter
- Rind of 1 lemon, into thin strips
- 2 to 3 tablespoons [30 mL to 45 mL] minced parsley
- Salt and pepper

- Pour water into an 8-cup [2-L] casserole; mix in salt and lemon juice.
- Bring to a boil, on 'HIGH', for 5 minutes.
- Well mix in rice; cover and microwave for 10 minutes on 'MEDIUM-HIGH'.
- Thoroughly mix; set aside, covered, for 15 minutes.
- Into a dish, mix together butter, lemon rind strips and parsley.
- Microwave for 2 minutes, on 'HIGH'.
- Mix into rice mixture, stirring with a fork.
- If needed, reheat for 1 minute, on 'HIGH'.
- Salt and pepper, to taste.
