Pilaf Rice

  • 1 cup [250 mL] long grain rice
  • 3 tablespoons [45 mL] olive oil
  • 1/2 Spanish onion, chopped
  • 2 cups [200 mL] chicken broth
  • Few knobs butter
  • Salt and pepper
  • Garlic salt
  • Thoroughly rinse rice under cold running water; drain rice.
  • Pour olive oil into a microwave-safe dish.
  • Microwave on 'MAXIMUM' for 2 minutes.
  • Mix in chopped onion; microwave for 2 minutes, on 'MAXIMUM'.
  • Mix in drained rice; microwave for 2 minutes, on 'MAXIMUM'.
  • Pour in chicken broth; microwave for 18 minutes, still on 'MAXIMUM'.
  • Stir in butter.
  • Season to taste with salt, pepper, and garlic salt, and serve.
  • Serve.
