Zucchini Cole Slaw

  • 1 pound [454 g] white cabbage, finely chopped
  • 8 ounces [227 g] zucchini, shredded
  • 3 or 4 small carrots, grated
  • 1 onion, chopped
  • 1/4 cup [60 g] sugar
  • 1/4 cup [60 mL] vinegar
  • 1/4 teaspoon [1 mL] celery seeds
  • Salt and pepper to taste
  • In a large bowl, mix together cabbage, zucchini, carrots and onion; set aside.
  • Mix together remaining ingredients.
  • Heat 1 1/2 minutes on 'HIGH', until sugar is dissolved and vinaigrette warm.
  • Pour warm vinaigrette over the vegetables and mix well.
