Cabbage Zucchini Salad [microwave]

  • 1 pound [454 g] cabbage, finely minced
  • 8 ounces [227 g] zucchini, grated
  • 3 or 4 small peeled carrots, grated
  • 1 onion, chopped
Salad Dressing
  • 1/4 cup [60 g] sugar
  • 1/4 cup [60 mL] vinegar
  • 1/4 teaspoon [1 mL] celery seeds
  • Salt and pepper, to taste
  • Into a glass salad bowl, mix together minced cabbage, grated zucchini, grated carrots and chopped onion; set aside.
  • Prepare salad dressing.
  • Pour hot salad dressing all over mixed vegetables.
  • Thoroughly mix and refrigerate, until cold.
  • Serve.
Salad Dressing
  • Into a microwave-safe bowl, mix together sugar, vinegar and celery seeds; salt and pepper.
  • Microwave mixture for 1 1/2 minutes on 'MAXIMUM' to dissolve sugar, until hot.
