Smooth Caper Sauce

A nice, smooth and rich butter sauce.
Servings: 4
  • 3 ounces [85 g] butter
  • 3 tablespoons [26.25 g] all-purpose flour
  • 1 1/4 cup [310 mL] milk
  • 1 bay leaf
  • 2 tablespoons [30 mL] drained chopped capers
  • Salt and pepper, to taste
  • Melt 2 tablespoons [30 g] of the butter into a covered, 5-cup [1.25-L] bowl, for 30 to 40 seconds on 'HIGH'.
  • Whip in flour; then slowly pour in milk, whipping.
  • Add bay leaf.
  • Microwave for 3 to 4 minutes on 'HIGH', whipping mixture half-way through.
  • Discard bay leaf; whip sauce.
  • Whip in remaining butter, until really smooth.
  • Delicately stir in capers.
  • Microwave sauce for 3 minutes on 'HIGH'.
  • Thorougly whip in salt and pepper, and serve.
