White Wine Mushroom Sauce

Excellent with veal or pork. Also excellent served over diced or thinly sliced meat leftovers; just cover and reheat for 2 minutes on 'HIGH' before serving.
Serve with pilaf rice.
To reheat, just microwave sauce for 2 minutes on 'MEDIUM'.

  • 1 tablespoon [15 g] butter
  • 1 heaping cup [250 mL] freshly cleaned and thinly sliced mushrooms
  • 2 shallots
    or
    4 green onions, washed and finely chopped
  • 1 tablespoon [15 mL] cornstarch
  • 1/2 cup [125 mL] dry white wine
    or
    juice of 1/2 lemon
  • 1 tablespoon [15 mL] cream
  • Salt and pepper, to taste
  • Melt butter into a 4-cup [1-L] measuring cup for 1 minute on 'HIGH'.
  • Add sliced mushrooms and chopped shallots or green onions.
  • Well stir in cornstarch.
  • Microwave for 2 minutes on 'HIGH'; stir.
  • Pour in white wine or lemon juice and cream; salt and pepper.
  • Microwave for 2 minutes more on 'HIGH', stirring after 1 minute.
