  • 1/3 to 1/2 cup [75 to 115 g] sweet or salted butter
  • 2 egg yolks
  • Juice of 1 small lemon
  • Salt, to taste
  • Arrange butter into a small microwave-safe casserole or a 2-cup [500-mL] measuring cup.
  • Microwave for 1 minute on 'MEDIUM-HIGH'.
  • Whip in egg yolks and lemon juice.
  • Microwave for 20 seconds on 'MEDIUM-HIGH'; whip
  • If needed, microwave on 'MEDIUM-HIGH' for 20 seconds more, until creamy.
  • Whip, salt and serve.
