Creamy White Sauce

This sauce, a white base sauce which have the consistency of a light white sauce, is excellent on many occasions.
  • 2 tablespoons [30 g] butter
  • 2 tablespoons [17.5 g] flour
  • 1 cup [250 mL] fish stock, canned clam juice, milk or light cream
  • Salt and pepper
  • Transfer butter and flour into a 4-cup [1-L] measuring cup.
  • Mix well.
  • Microwave on 'HIGH' for 4 minutes, stirring after 2 minutes.
  • You will notice small brown spots into the mixture; that's ok.
  • Stir in fish stock, clam juice, milk or light cream.
  • Salt and pepper.
  • Microwave for 4 to 5 minutes on 'HIGH', stirring once.
