Sauce from Vaucluse

  • 2 tablespoons [30 g] butter
  • 2 tablespoons [17.5 g] flour
  • 1 1/2 cups [375 mL] cream
  • Salt and pepper, to taste
  • 2 egg yolks, beaten
  • 1 recipe Hollandaise sauce
  • Melt butter for 1 minute on 'HIGH'.
  • Well stir in flour.
  • Pour in cream; stir well.
  • Microwave for 3 to 4 minutes on 'HIGH', stirring a few times while cooking, until sauce is creamy.
  • Stir in beaten egg yolks and Hollandaise sauce, until smooth and creamy.
  • Reheat sauce for 1 minute on 'HIGH'; stir well.
  • If needed, microwave for 30 seconds longer on 'MEDIUM-HIGH'.
  • Stir well and serve.
