Chili Sauce
  • 12 larges red tomatoes
  • 2 sweet green peppers
  • 3 large onions
  • 500 mL [2 cups] vinegar
  • 30 mL [2 tablespoons] salt
  • 1 teaspoon [5 mL] ground clove
  • 1 teaspoon [5 mL] ground cinnamon
  • 1 teaspoon [5 mL] ground nutmeg
  • 2 teaspoons [10 mL] ground ginger
  • Hot sterilized jars
  • Peel then finely dice tomatoes.
  • Half, remove seeds and membranes then finely dice sweet green pepper.
  • Finely dice onions.
  • Mix together tomato, sweet green pepper and onion dices, vinegar, salt, ground clove, cinnamon, nutmeg and ginger into a large microwave-safe casserole.
  • Cover and microwave on 'MEDIUM' for 30 to 35 minutes.
  • Leave to stand, covered, for 10 minutes.
  • Fill hot sterilized jars to within 1/2-inch [1.3-cm] of top; seal jars.
  • Process for 5 minutes into a bath of boiling water [start timing when water returns to a boil].
