- 12 larges red tomatoes
- 2 sweet green peppers
- 3 large onions
- 500 mL [2 cups] vinegar
- 30 mL [2 tablespoons] salt
- 1 teaspoon [5 mL] ground clove
- 1 teaspoon [5 mL] ground cinnamon
- 1 teaspoon [5 mL] ground nutmeg
- 2 teaspoons [10 mL] ground ginger

- Peel then finely dice tomatoes.
- Half, remove seeds and membranes then finely dice sweet green pepper.
- Finely dice onions.
- Mix together tomato, sweet green pepper and onion dices, vinegar, salt, ground clove, cinnamon, nutmeg and ginger into a large microwave-safe casserole.
- Cover and microwave on 'MEDIUM' for 30 to 35 minutes.
- Leave to stand, covered, for 10 minutes.
- Fill hot sterilized jars to within 1/2-inch [1.3-cm] of top; seal jars.
- Process for 5 minutes into a bath of boiling water [start timing when water returns to a boil].
