Provencal-Style Shrimps

An excellent recipe from Provence!
For an elegant touch, serve shrimps into a table-top pot, sauce on the side.
IngredientsPreparation
  • 1 pound [454 g] fresh shrimps
  • 1/2 cup [125 mL] water
  • 1/2 cup [125 mL] small mushrooms, quartered
  • 6 peppercorns
  • 2 medium-size tomatoes, diced
Sauce
  • 2 shallots or 6 green onions, minced
  • 1/2 cup [125 mL] white wine or white Vermouth
  • 1 bay leaf
  • 1/4 teaspoon [1 mL] thyme
  • 1 teaspoon [5 mL] basil
  • 2 tablespoons [30 g] butter
  • 2 tablespoons [17.5 g] flour
  • 1 garlic clove, crushed or finely minced
  • 1 teaspoon [5 mL] tomato paste
  • 1/2 cup [125 mL] water, fish broth or clam juice
  • Prepare sauce.
  • Meanwhile, shell and remove veins from shrimps; arrange into a bowl.
  • Pour in water; add mushrooms, peppercorns and tomato dices.
  • Microwave on 'MEDIUM-HIGH' for 3 minutes, stirring once.
  • Remove peppercorns.
  • Pour sauce over shrimps and serve.
Sauce
  • Into a bowl, mix together shallots or green onions, white wine or Vermouth, bay leaf, thyme and basil.
  • Microwave on 'HIGH', uncovered, for 3 minutes.
  • Mix together butter and flour; mix into wine sauce, stirring.
  • Microwave for 2 to 3 minutes on 'HIGH', stirring once.
  • Mix in garlic, tomato puree and, to taste, water, fish broth or clam juice.
  • Well mix; microwave on 'MEDIUM-HIGH' for 4 minutes, stirring once.
