Shrimps in White Wine Sauce

  • 1 [10-ounce / 280-g] pack raw frozen shrimps, shelled
  • 1/4 cup [60 mL] really hot water
  • 2 teaspoons [10 mL] lemon juice
  • 1/4 teaspoon [1 mL] salt
  • 1/4 teaspoon [1 mL] thyme or basil
  • 1/3 cup [80 mL] dry white wine or white Vermouth
  • 1/2 teaspoon [2.5 g] sugar
  • 2 tablespoons [30 mL] oil
  • 1 garlic clove, minced
  • 1 medium-size tomato, peeled and chopped
  • 2 green onions, finely minced
  • Arrange thawed shrimps into an 8-cup [2-L] glass bowl; set aside for 2 minutes.
  • Arrange shrimps, one at a time, into a 4-cup [1-L] microwave-safe dish.
  • Mix together hot water, lemon juice, salt, thyme or basil, dry white wine or Vermouth and sugar; pour all over shrimps.
  • Microwave, uncovered on 'HIGH', for 4 minutes.
  • Leave to rest for 1 minute.
  • Drain shrimps; set aside.
  • Pour oil into the 4-cup [1-L] microwave-safe dish; microwave for 1 minute, on 'HIGH'.
  • Add garlic, tomato and green onions.
  • Microwave, covered with waxed paper, for 2 minutes, on 'HIGH'.
  • Mix in shrimps; microwave for 2 minutes, on 'HIGH'.
  • Serve.
