Scallops Brochettes

IngredientsPreparation
  • 1 sweet onion, cut into 4 equal parts and layered
  • 8 slices bacon, cut into 4 sections
  • 8 large scallops, halved [corals reserved]
  • 8 fresh mushrooms
  • Hot boiled rice
Coating
  • 3 tablespoons [45 mL] vegetable oil
  • 1 tablespoon [15 mL] white wine vinegar
  • Salt and pepper, to taste
  • Alternately thread:
  • 1 onion layer
  • 1 section bacon
  • 1 scallop half
  • 1 section bacon
  • 1 mushroom
  • 1 onion layer
  • 1 section bacon
  • 1 scallop
  • 1 section bacon
  • 1 onion section
  • onto each of the 8 wooden skewers.
  • Arrange brochettes, side by side, into a large plate.
  • Mix together all coating ingredients [vegetable oil, white wine vinegar, salt and pepper]; brush skewers with half of mixture.
  • Microwave for 4 minutes on 'HIGH'.
  • Turn over skewers; thread 1 reserved coral at the end of each skewer.
  • Brush with remaining coating mixture; microwave for 3 minutes, until scallops are tender.
  • Leave to rest for 3 minutes.
  • Serve over hot boiled rice, coated with cooking juices.
