- 1 sweet onion, cut into 4 equal parts and layered
- 8 slices bacon, cut into 4 sections
- 8 large scallops, halved [corals reserved]
- 8 fresh mushrooms
- Hot boiled rice
Coating
- 3 tablespoons [45 mL] vegetable oil
- 1 tablespoon [15 mL] white wine vinegar
- Salt and pepper, to taste

- onto each of the 8 wooden skewers.
- Arrange brochettes, side by side, into a large plate.
- Mix together all coating ingredients [vegetable oil, white wine vinegar, salt and pepper]; brush skewers with half of mixture.
- Microwave for 4 minutes on 'HIGH'.
- Turn over skewers; thread 1 reserved coral at the end of each skewer.
- Brush with remaining coating mixture; microwave for 3 minutes, until scallops are tender.
- Leave to rest for 3 minutes.
- Serve over hot boiled rice, coated with cooking juices.
