Hockey Night Seafood

An other excellent seafood dish that, even though it is not a soup, should be served in a soup bowl, along with large, hot buttered biscuits.

IngredientsPreparation
  • 1/4 cup [60 g] butter or margarine
  • 2 medium-size potatoes, diced
  • 1/2 cup [125 mL] diced or minced carrot
  • 1 large onion, diced
  • 1 pound [454 g] fresh or frozen haddock
  • 1/4 cup [60 mL] water
  • 2 [5-ounce / 142-g each] cans clams, with juice
  • 1 pound [454 g] scallops, halved
  • 1 pound [454 g] small shrimps [optional]
  • 1 cup [250 mL] light cream
  • 1/2 teaspoon [2.5 mL] curry powder [optional]
  • Salt and pepper, to taste
  • Into an 8-cup [2-L] bowl, melt butter or margarine on 'HIGH', for 1 minute.
  • Well mix in potatoes, carrot and onion.
  • Pour in water; cover and microwave on 'MEDIUM-HIGH', for 10 minutes, stirring once, at half-time.
  • Cut haddock into individual servings; add fish to vegetables, along with clams, and juice.
  • Microwave on 'MEDIUM' for 6 minutes.
  • Well mix in scallops, shrimps [if desired], cream, curry powder, salt and pepper.
  • When almost ready to serve, cover and microwave mixture for 8 minutes, on 'MEDIUM'.
