- 1 cup [200 g] sugar
- 1/2 cup [125 mL] light corn syrup
- 1/8 teaspoon [0.5 mL] salt [optional]
- 1 teaspoon [5 g] butter
- 1 1/2 cups [375 mL] cashews
- 1 teaspoon [5 mL] vanilla extract
- 1 teaspoon [5 mL] baking soda

- Stir together sugar, corn syrup and, if desired, salt into a 1 1/2-quart [6-cup / 1.5-L] microwave-safe container.
- Microwave for 4 minutes on 'HIGH'; stir, microwave for 4 minutes more.
- Stir in butter, cashews and vanilla.
- Microwave for 2 minutes longer on 'HIGH'.
- Add baking soda and quickly stir until light and foamy.
- Immediately pour onto a lightly greased baking sheet; spread to 1/4-inch [1-cm] thickness.
- Leave to cool; break-up mixture into pieces.
- Store into an airtight container.
