Jasmine's Vanilla Fudge

  • 1 cup [200 g] sugar
  • 1 cup [250 mL] brown sugar
  • 1 cup [250 mL] heavy cream [35% m.s.g.], at room temperature
  • 2 teaspoons [10 mL] corn syrup
  • 5 large marshmallows
  • 1 teaspoon [5 mL] vanilla
  • 1 tablespoon [15 g] butter
  • In a glass 4-cup [1-L] measuring cup or a microwave-safe bowl, mix together sugar, brown sugar, cream and corn syrup.
  • Microwave on 'HIGH' for 12 1/2 minutes, stirring every 4 minutes.
  • Time may vary, according to microwaves.
  • Remove from oven; mix marshmallows, vanilla and butter.
  • Stir; pour into a square 9-inch [23-cm] dish.
