France's Vanilla Fudge [microwave]

Comments: This easy to do vanilla fudge is really smooth. A real delight!
  • 2 cups [500 mL] brown sugar
  • 1 cup [500 mL] heavy cream [35% m.s.g.]
  • 1 tablespoon [15 g] butter or margarine
  • Few drops vanilla
  • A little sifted icing sugar
  • Mix together, in an 8-cup [2-L] microwave-safe bowl, brown sugar, heavy cream, butter or margarine and vanilla.
  • Microwave on 'HIGH' for 10 minutes, uncovered.
  • Remove from oven; immediately beat with an electric mixer, sprinkling in just enough sifted icing sugar.
  • Beat for approximately 2 to 3 minutes.
  • Pour into a buttered mold.
  • Cool completely before cutting and serving.
