Renee-Solange's Vanilla Fudge [microwave]

  • 1 cup [200 g] sugar
  • 1 cup [250 mL] brown sugar
  • 1 cup [250 mL] heavy cream [35%]
  • 1 tablespoon [15 g] butter
  • 1 1/2 teaspoons [7.5 mL] vanilla
  • In an 8-cup [2-L] glass bowl, mix together sugar, brown sugar and cream.
  • Microwave on 'HIGH' for 10 minutes.
  • Leave to rest for 10 minutes.
  • Add butter and vanilla; beat with an electric mixer until mixture just starts to set.
  • Spread into a pan.
  • Refrigerate until cold.
  • Cut into pieces.
