Peanut Brittle

  • 1 cup [200 g] sugar
  • 1/2 cup [125 mL] corn syrup
  • 1 cup [250 mL] salted peanuts
  • 1 teaspoon [5 mL] vanilla
  • 1 tablespoon [15 g] butter
  • 1 teaspoon [5 mL] baking soda
  • Into a bowl, mix together sugar and corn syrup; microwave for 4 minutes, on 'HIGH'.
  • Mix in peanuts; microwave for 4 1/2 minutes on 'MAXIMUM'.
  • Meanwhile, spread out a cloth, soaked in hot water, underneath a buttered baking sheet, to help mixture to spread out.
  • Mix vanilla, butter and baking soda into peanuts mixture.
  • Stir immediately; pour onto buttered baking sheet.
  • Leave to cool completely before breaking into pieces.
