Carob Almond Fudge [microwave]

  • 4 ounces [113 g] sesame seeds
  • 2 ounces [56 g] chopped almonds
  • 2 ounces [56 g] raisins
  • 2 tablespoons [30 mL] unsweetened orange juice
  • Few drops vanilla extract
  • 2 ounces [56 g] carob powder
  • 2 ounces [56 g] poIyinsaturated margarine
  • 18 blanched almonds, halved
  • Crumble sesame seeds into a food processor or a coffee grinder; mix with chopped almonds.
  • Plump raisins: microwave raisins in orange juice, covered, on 'MAXIMUM' , for 1 to 1 1/2 minutes; set aside for 1 minute.
  • Mix raisins into chopped almonds mixture.
  • Mix in vanilla and carob powder.
  • Melt margarine, covered, for 45 to 60 seconds on 'MAXIMUM; leave to cool slightly before mixing into almonds mixture.
  • Pour into a square dish, to cool; cut into 36 squares.
  • Decorate squares with blanched almond halves.
