Vanilla Fudge

  • 2 cups [500 mL] brown sugar
  • 3/4 cup [190 mL] evaporated milk
  • 2/3 cup [150 g] butter
  • 2 cups [500 mL] icing sugar
  • Vanilla, to taste
  • Nuts [optional]
  • Microwave together brown sugar, evaporated milk and butter, on 'HIGH', for 10 minutes, stirring every 2 minutes.
  • Leave to rest for 5 minutes.
  • Beat in icing sugar and vanilla, with an electric mixer, for 8 minutes.
  • If desired, stir in nuts.
