Frank's Vanilla Fudge

  • 3/4 cup [175 g] butter, at room temperature
  • 2 cups [500 mL] unpacked brown sugar
  • 1 [10 1/2-ounce / 300-mL] can sweetened condensed milk
  • 2 cups [500 mL] unpacked icing sugar
  • Mix together butter, brown sugar and sweetened condensed milk into a large microwave-safe dish.
  • Cook at intensity 6 or 7 for 7 to 8 minutes, stirring 2 minutes.
  • Remove from oven and leave to rest for 5 minutes.
  • Using an electric beater, slowly beat in icing sugar
  • Evenly pour into a buttered dish; refrigerate for 1 hour.
  • Cut vanlla fudge into squares, and enjoy!
