Herb Parmesan Carrots

  • 3 cups [750 mL] thinly sliced carrots
  • 1/4 cup [60 mL] water
  • 1/3 cup [80 mL] low-fat salad dressing
  • 1/3 cup [75 g] grated light Parmesan cheese
  • 1/4 cup [60 mL] chopped parsley
  • Microwave together carrot slices and water into a covered microwave-safe bowl on 'HIGH' for 6 to 7 minutes, stirring halfway through; drain.
  • Into a bowl, mix together salad dressing, grated cheese and chopped parsley.
  • Toss with carrots.
  • Serve immediately.
