Light Mashed Potatoes

  • 5 medium-size red potatoes, unpeeled
  • 1/3 cup [80 mL] low fat salad dressing
  • 1 teaspoon [5 mL] prepared horseradish
  • 1/2 teaspoon [2.5 mL] garlic powder
  • 1/4 cup [60 mL] water
  • Cut potatoes into 1 1/2-inch [4-cm] cubes.
  • Microwave, covered with water on 'HIGH' for 12 to 13 minutes, until tender; drain.
  • Stir in salad dressing, horseradish, garlic powder and water.
  • Mash using a potato masher.
  • Serve hot.
