Fine Herbs Mushrooms [microwave]

  • 4 teaspoons [20 mL] sunflower oil
  • 1 pound [454 g] fresh mushrooms
  • 2 tablespoons [30 mL] lemon juice
  • 2 tablespoons [30 mL] grossly chopped fresh parsley
  • 2 teaspoons [10 mL] freshly chopped thyme
    or
    1 teaspoon [5 mL] dried thyme
  • 2 tablespoons [30 mL] pumpkin seeds
  • Whole wheat crackers
  • Preheat a browning dish on 'MAXIMUM', for 5 minutes, or as indicated by the manufacturer.
  • Pour in sunflower oil; add mushrooms and sprinkle with lemon juice, chopped parsley and thyme.
  • Stir; cover and microwave on 'MAXIMUM' for 4 1/2 to 5 1/2 minutes, stirring at half-time.
  • Sprinkle with pumpkin seeds and serve hot, along with whole wheat crackers.
For 2 servings
  • Use half of all of the ingredients.
  • Microwave on 'MAXIMUM' for 4 to 4 1/2 minutes.
