- 4 teaspoons [20 mL] sunflower oil
- 1 pound [454 g] fresh mushrooms
- 2 tablespoons [30 mL] lemon juice
- 2 tablespoons [30 mL] grossly chopped fresh parsley
- 2 teaspoons [10 mL] freshly chopped thyme
or 1 teaspoon [5 mL] dried thyme
- 2 tablespoons [30 mL] pumpkin seeds
- Whole wheat crackers

- Preheat a browning dish on 'MAXIMUM', for 5 minutes, or as indicated by the manufacturer.
- Pour in sunflower oil; add mushrooms and sprinkle with lemon juice, chopped parsley and thyme.
- Stir; cover and microwave on 'MAXIMUM' for 4 1/2 to 5 1/2 minutes, stirring at half-time.
- Sprinkle with pumpkin seeds and serve hot, along with whole wheat crackers.
For 2 servings
- Use half of all of the ingredients.
- Microwave on 'MAXIMUM' for 4 to 4 1/2 minutes.
