Caesar-Style Scallopped Potatoes

  • 1 tablespoon [8.75 g] all-purpose flour
  • 2 cups [500 mL] milk
  • 1 pack dry onion soup mix
  • 1/2 cup [115 g] grated Parmesan cheese
  • 1 teaspoon [5 mL] Dijon mustard
  • 1/2 teaspoon [2.5 mL] black pepper
  • Pinch of garlic powder
  • 4 cups [1 L] peeled potato slices
  • Into a large, microwave-safe bowl, melt butter on 'MAXIMUM'.
  • Stir in flour; microwave on 'MAXIMUM' for 30 seconds.
  • Whip in milk and onion soup mix.
  • Microwave on 'MAXIMUM' for 4 to 6 minutes, until just thickened, stirring twice.
  • Stir in grated cheese, Dijon mustard, black pepper, and garlic pepper; mix in potato slices.
  • Cover and microwave, on 'MAXIMUM', stirring twice, for 12 to 16 minutes until potatoes are soft.
