Maple Syrup Candied Carrots

As springtime is at our doors, maple sap is boiling in 'cabane a sucre' [sap houses] and freshly cropped carrots are not yet available, these carrots appear to be an excellent choice.
Hint: to ealisy reheat honey, corn syrup or maple syrup, remove bottle cap; microwave a 13-ounce [370-mL] bottle, uncovered, for 30 to 45 seconds, at 'HIGH', until just boiling.

| Ingredients | Preparation |
- 6 to 8 medium carrots
- 1/2 cup [125 mL] freshly squeezed orange juice
- Grated rind of 1 orange
- 3 tablespoons [45 mL] maple syrup
- Pinch of mace or nutmeg
- 3 tablespoons [45 g] butter

- Peel carrtos; cut carrots into small sticks.
- Pour orange juice into a 4-cup [1-L] microwave-safe dish; microwave on 'MAXIMUM' for 1 minute.
- Mix in carrot sticks and orange rind, until well coated with orange juice.
- Cover; microwave on 'MAXIMUM' for 8 to 9 minutes.
- Stir; mix in maple syrup, mace or nutmeg and butter.
- Microwave, uncovered on 'MAXIMUM' for 3 minutes.
- After 2 minutes, stir and check for doneness [some carrot sticks could already be glazed and done by then].
