California-Style Broccoli

Even though there is a great affinity between fresh broccoli and freshly squeezed orange juice, it seems that they rarely are part of the same dish.

  • 1 pound [454 g] broccoli
  • 1 cup [250 mL] freshly squeezed orange juice
  • 2 tablespoons [30 g] butter or margarine
  • 2 tablespoons [17.5 g] flour
  • Pinch of salt
  • Cut flowerets from stems.
  • Arrange flowerets in the center of a long, microwave-safe dish.
  • Peel and slice stems diagonally; arrange pieces at both ends of dish.
  • Or, arrange flowerets in the center of a microwave-safe dish, cut stems all around.
  • Or, prepare and cook quite a bit of broccoli stems and flowerets and serve flowerets only, reserving whole or sliced stems for another meal.
  • Or, microwave rinsed and peeled broccoli head whole, without removing flowerets, after cutting slits here and there in stem, using the tip of a knife [broccoli will be of a nice dark green and really tender].
  • A microwave-oven with an 'auto-sensor' will cook broccoli to perfection, following owner's manuel instructions, as cooking time may vary depending on the way broccoli is cut.
  • Sprinkle broccoli with 3 tablespoons [45 mL] of the orange juice; cover and microwave on 'MAXIMUM' for 6 to 9 minutes; set aside.
  • Into a bowl, melt butter or margarine on 'HIGH' for 1 minute.
  • Blend in flour; well stir in remaining orange juice.
  • Microwave on 'MAXIMUM' for 3 to 4 minutes, stirring once, to get a creamy, translucent mixture.
  • Salt and mix.
  • Drain broccoli.
  • Serve, coated with orange sauce.
